Brussels Sprouts

The Latin name for Brussels sprouts is Brassica oleracea var gemmifera. They find their origin in Belgium, Western Europe, and were already popular in the sixteenth century. In the following centuries this vegetable spread out over the rest of Europe. Later the Brussels sprouts were introduced by the French in Louisiana. 

Brussels sprouts are probably a mutation of the savoy cabbage. They exist in two main varieties: the short variety with a height of 2 feet and the tall variety with a height of 2 to 4 feet. Americans prefer sprouts of 1 to 2 inches in diameter, while the Europeans prefer smaller ones, ˝ inch in diameter. 

Two recipes for Brussels sprouts: Recipe 1. Cook sprouts for ! to 10 minutes in boiling salted water. Drain in a colander and add butter and salt and pepper to taste. Recipe 2. Split the sprouts and roll them in flour, beaten egg and grated Parmesan cheese. Fry them slowly in oil or butter until tender for 15 minutes.
