Belgium recipes underwent a lot of influences because this country has been invaded and ruled by many peoples, such as Romans, Vikings, Spanish and French. These days a lot of spices such as ginger, saffron, cinnamon, nutmeg an peppercorns are still used in Belgium recipes and even in beer. Talking of which, Belgian beer isn't only the county's national drink, but it's also widely used in cooking. Belgium recipes with beer are very popular. Here's an example: Brussels sprouts in beer. You need 450 g Brussels sprouts, 480 ml dark beer, 1/2 teaspoon salt and 3 tablespoons butter. Place the sprouts in a saucepan and pour in enough beer to cover. Bring to the boil, reduce heat and simmer for 15-20 minutes or until tender. Drain well, then return to the pan, season with salt and add the butter. Stir over a low heat until the butter has melted and coated the sprouts. Serve immediatealy.
