Belgian Waffle RecipesThere are many Belgian waffle recipes.
There are in fact many varieties of Belgian waffle recipes you can choose from. Normally snack bars and waffle houses serve “Brussels” waffles. These have a very light structure. Sometimes you see people outside a tea-room baking “sugar” waffles. These are much sweeter and smaller. No yeast is used for the dough and they are usually called “waffles from Liege” (Liège is another city in Belgium). In Belgian homes and in restaurants you will find many more Belgian waffles recipes. The best waffles are those made with yeast. Some people use self-raising flour or baking powder, but the result is not as good. There are many Belgian waffle recipes, but the best ones and the most original ones are those made with yeast. For most basic Belgian waffle recipes you’ll need 1 package of dry yeast, 2 cups lukewarm milk, 4 separated eggs, 1 teaspoon vanilla, 2 ½ cups sifted flour, ½ teaspoon salt, 1 tablespoon sugar and ½ cup melted butter. Sprinkle yeast over the milk and stir to dissolve. Beat egg yolks and add to milk and vanilla. Add flour, sugar and salt. Stir in melted butter. Beat egg whites until stiff and carefully fold into batter. Let mixture stand in a warm place for 45 minutes. Use 7/8 cup mix per waffle.
