Belgian Waffle Recipe

The basic Belgian waffle recipe to remember.

 

Actually there’s no real traditional Belgian waffle recipe, but there’s a whole bunch of varieties you can choose from. Normally snack bars and waffle houses serve “Brussels” waffles. These have a very light structure. Sometimes you see people outside a tea-room baking “sugar” waffles. These are much sweeter and also smaller. No yeast is used for the dough and they also are called “waffles from Liege”. At homes and in restaurants you will find many more  and you can improvise with you Belgian waffle recipe. 

The best waffles are those made with yeast. Some people use self-raising flour or baking powder, but the result is not as good. There are many recipes, but if you can find one with yeast in the dough, you’ve found a good Belgian waffle recipe. 

For the basic Belgian waffle recipe you’ll need 1 package of dry yeast, 2 cups lukewarm milk, 4 separated eggs, 1 teaspoon vanilla, 2 ½  cups sifted flour, ½ teaspoon salt, 1 tablespoon sugar and ½ cup melted butter. Sprinkle yeast over the milk and stir to dissolve. Beat egg yolks and add to milk and vanilla. Add flour, sugar and salt. Stir in melted butter. Beat egg whites until stiff and carefully fold into batter. Let mixture stand in a warm place for 45 minutes. Use 7/8 cup mix per waffle. Enjoy.
